MIX-IN COOKIES

This recipe allows plenty of substitutions, so provides the perfect base if you want to make use of what’s in your pantry (like during a nationwide lockdown..) or if you don’t like to follow the rules, or recipes.

MIX-IN COOKIES

Makes 10 100gm (extra-large) cookies

YOU’LL NEED:

175gm butter

140gm brown sugar

110gm white sugar

12gm molasses (or any other liquid sugar to keep ‘em soft - maple, golden syrup, honey)

1 egg

250gm flour (we used white, but rye, spelt, wholemeal all work well too)

½t baking soda

½t salt

250gm mix-ins - chocolate is an obvious choice, but use your imagination rather than rushing to the supermarket! Coconut, nuts, spices, dried fruit, cornflakes, potato chips, pretzels, marshmallows, coffee grinds, oats, sprinkles - this is where you get to make the cookies your own!

METHOD:

Pre-heat your oven to 160c, and line two oven trays with baking paper

Mix the butter until the consistency of mayo, then add your sugars. Cream the mixture until fluffy and light in colour.

Add the egg and mix until just incorporated (don’t over mix or the cookies will puff too much).

Sift in your dry ingredients and mix until everything is incorporated.

Time for the mix ins! Make sure things like coffee and spices (that you don’t want a mouthful of) are well incorporated, and fragile ingredients such as potato chips are added last and only slightly mixed.

Roll into 10x 100gm balls, then flatten slightly. This will make mega cookies, just like we sell at the bakery. You can make them smaller if you wish, just remember to adjust the baking time.

Chill your cookies for at least 30 mins. At Grizzly we chill our cookies for 24-48hrs for maximum flavour. You can also freeze the balls of dough, so you’ll have treats on hand at a moments notice.

These cookies will spread, so give them plenty of space when you arrange them on your baking trays. Bake at 160c for 14 mins. They’ll be soft and molten when they come out of the oven, so leave them to cool on their trays for as long as you can manage, then tuck in!
