As far as cult classics go, the Eggy Breakfast at Grizzly is a staple that’s been in our shops from the beginning. But if you want to make one yourself, here’s a little guide to achieve that savoury breakfast perfection at home. While the recipe calls for a specific cheese and a certain amount of hot sauce, feel free to adjust these to your preferences. Additionally, if you want to use a fried egg or scrambled egg in the recipe, go ahead—-there aren’t any rules. Oh, and pick up the bagels in store or online here.

Equipment: small bowl, serrated knife, small nonstick pan
Slice the bagel in half widthwise. Toast in toaster. While toasting, coat your tomato in hot sauce. Place slice of smoked gouda on the cut surface of the toasted top half of the bagel. Spread mayonnaise across the cut surface of the bottom half of the bagel. Set aside.
In a small bowl, whisk together egg, salt and milk until completely smooth. Heat butter in a small nonstick pan over medium-high heat, swirling around until entirely coated in butter. Once butter has melted, add egg and do not disturb for 30 seconds. Use a rubber spatula to gently lift the edges of the egg circle and tilt the pan with the other hand to allow the liquid on top to slide underneath the cooked egg. Once the top of the egg is just slightly wet, fold the circle in half (the residual heat of the egg will finish cooking the inside), and transfer to the mayo-covered bottom half of the bagel.
Top egg with sauced tomato slice, a small handful of spinach, and the top of the bagel with the slightly melted cheese. And just like that, you’ve made an Eggy Breakfast at home!
