SOURDOUGH PANCAKES
So you've been making sourdough at home BUT WHAT TO DO WITHT THE LEFTOVER STARTER...? The sourdough in this recipe works in a similar way to buttermilk, and will give it extra lift.
Pancakes:
230g milk
2 large eggs
60g starter
50g melted butter

220g flour
3 T caster sugar
2 t baking powder
½ t baking soda
½ t salt
Whisk together the wet ingredients in a bowl. Sieve dry ingredients into a separate bowl. Add dry ingredients to wet and whisk until combined and smooth (don't worry if there's a few little lumpy bits, they'll be gone once cooked). Cook pancakes over low heat. Pile up on a plate and drown in maple syrup and butter.
Serves 2-3.
