SUMMER BERRY COBBLER

This is the kind of recipe that you can cater to whatever berries (or any summer fruit) you have on hand. And while we definitely recommend using juicy fresh fruit, this can just as easily be made with frozen berries. With a batter that comes together in a minute and only requiring a bowl and a whisk, a cobbler is easily one of the quickest desserts you can throw together.

Equipment: 24-cm cast-iron pan, whisk, mixing bowls

YOU’LL NEED

300g fresh or frozen berries

40g lemon juice

160g sugar, divided

1g salt

145g wholemeal flour

7g baking powder

170g milk

100g butter

METHOD

Heat a 24-cm cast-iron pan in a 165°C oven. Place butter in pan to melt as the pan heats.

In a mixing bowl, whisk together 135g of sugar with the salt, flour, and baking powder until well combined. Add milk and whisk until the batter is smooth.

In a separate bowl, toss berries with remaining 25g sugar and lemon juice.

Carefully remove hot pan with melted butter from oven. Pour batter into pan and spread evenly to edges. (Note: butter will pool over the sides of the batter and that’s perfectly normal.) Mound berries and juices from the bowl in the center of the batter.

Carefully return pan to oven and bake until edges are firm to the touch and the surface of the batter is lightly browned, about 40 minutes. Set aside to cool slightly.

Serve warm with vanilla ice cream.
